Pear and Craisin Salad with Ginger Dressing


I found this Ginger Dressing here, when looking for a vinaigrette that would go with my imagined Christmas salad of greens, craisins, pear slices, toasted pecans and feta cheese. (My original plan was to do this Pomegranate Pear Salad which we've had before; I was disappointed that the pomegranates in the store didn't look fresh enough.)

Ginger Vinaigrette

  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon sea salt
  • 10 twists freshly cracked pepper
Combine ingredients; toss with salad greens. Place on plates, then sprinkle with desired salad ingredients.
