Portuguese Custard Tarts
Our neighbor gave us a delicious Christmas treat - Portuguese Milk Custard Tarts. They're quite delicious, so I tracked down the recipe. Here it is:
Queijadas de Leite
- 3 eggs at room temperature
- 2 cups sugar
- 3 tablespoons melted butter
- 2 cups milk, warmed for 30 seconds in microwave
- 2/3 cup flour
- Cinnamon
Preheat oven to 350 degrees and grease 18 muffin cups. Beat eggs, sugar and butter together with a whisk. Stir in flour until smooth. Add in the warm milk and mix until smooth; it will be a thin batter. Pour into the muffin tins and bake 20-30 minutes, or until golden brown. Remove from oven and sprinkle with cinnamon. Allow to cool in the pan for 5-10 minutes, then carefully remove. Note that the tarts will puff during baking and then fall while cooling. Serve warm, at room temperature, or chilled - your preference!
