Turkey Frame Soup
After roasting a turkey, it's always a nice idea to cook the bones again and make soup. Normally I just place the turkey carcass in our large pot, add several cups of water, maybe an onion and/or a stalk or two of celery, then let it simmer for several hours. After it cools down, remove the meat from the bones and strain the broth, then combine for some soup. However, it's always nice to add some vegetables as well.
This week I sauteéd chopped onions and carrots and garlic in a bit of olive oil. Then I added some chopped broccoli stems, cabbage and mushrooms - that's what needed to be used - before putting the broth and turkey in the pot, along with seasonings. This was my inspiration recipe. This one, with tomatoes and kidney beans, also looked delicious; maybe we'll try that next time. Of course, this Turkey & Wild Rice Soup is also a contender.
