Potato Patties
This recipe called for baked or boiled potatoes, so we did that step ahead of time. Today we peeled the potatoes, mashed them with a touch of butter and sour cream, then mixed in a bit of green onions and parsley. We should have added salt and pepper, but the recipe didn't call for that, so we didn't! Next time we will. (Today we used baked potatoes; we'll try this again with boiled ones.)
Form the mixture into patties (5 large potatoes equaled 12 patties) and coat with flour. Heat some bacon grease (or vegetable oil) in a large pot, then take a picture of the cool design (not necessary).
Fry the patties until golden brown and crisp and serve warm. That's it!


We did do the second variation (boiled potatoes) and they turned out just as deliciously. Wayne says ketchup on top enhances the taste.
