Pan Seared Mahi

 

Lemon goes well with fish. We had mahi mahi in the freezer and lemon paste in the fridge. It seemed a no-brainer to combine the two. Throw in some garlic and butter, and we had a beautifully simple and delicious dinner.

This is basically a process more than a recipe. Heat some olive oil in a saucepan over medium-high heat. Pat a thawed mahi filet dry with a paper towel, season with salt and pepper, and place in the hot pan. Leave it be for a few minutes while it cooks on one side, then carefully turn and cook for a few more minutes until done. Remove from the pan and keep warm. Turn the heat down to low and add some butter to the pan along with a touch of lemon juice and zest (or lemon paste), garlic and parsley. Pour over the fish and serve.
