Almond Cookies
- 1 1/2 cups almond flour
- 1/4 cup gluten-free flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup dairy-free butter
- 1/4 cup maple syrup
- 1 teaspoon almond extract
- Blanched or sliced almonds for garnish
Combine dry ingredients then cut in butter. Stir in maple syrup and almond extract until mixture sticks together. Roll into 1" balls and place on baking sheet. Flatten slightly then top with an almond. Bake for 11-12 minutes at 350 degrees. Make about 21 cookies.
This was a great cookie to serve with our simple dairy-free ice cream made with 1 1/2 cups mango puree and 1 1/2 cups (one can) coconut milk.
After our delicious dessert, we played a rousing game of Monopoly - Lord of the Rings style - with our guests. Such fun memories!
