Arroz Marinera Columbia
This was a delicious dish, that actually went together quite quickly. Although the recipe states two servings, it's really closer to 4-6!
Columbia Seafood Rice
- 1/2 cup olive oil
- 8 jumbo shrimp
- 1/4 pound snapper fillet, cut in chunks
- 15 scallops
- 1 green pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups seafood broth or water
- 1 cup white wine
- 1 teaspoon salt
- 1 1/2 cups Valencia or long-grain rice, uncooked
- Green peas (cooked) and pimento or roasted red pepper strips for garnish
Heat oil in an ovenproof skillet and sauté shrimp, snapper and scallops until shrimp is pink. Add pepper, onion and garlic and cook until soft. Stir in broth, wine and salt. Bring to a boil, stir in rice, then immediately cover and bake at 350 for 15 minutes or until rice is cooked through. Garnish with peas and pimento. Serves 2.
Version Two used water and regular rice instead of seafood stock and Valencia rice. It was just as good.
