Shiitake Chicken Stir-Fry
We're going through mushrooms in the produce aisle; next up was a package of shiitake mushrooms. We decided to use them in a chicken stir-fry for our Sunday dinner. It was a bit salty, but otherwise quite satisfying.
Shiitake Chicken Stir-Fry
- 8 ounces chicken breast, sliced
- 2 tablespoons rice wine
- 2 tablespoons soy sauce
- 1 teaspoon brown sugar
- 1 tablespoon oil
- 4 ounces shiitake mushrooms, sliced
- 1/2 onion, sliced
- 1 tablespoon oyster sauce
- 1 green onion, sliced
Combine chicken, rice wine, soy sauce, and brown sugar and marinate for 30-60 minutes. Heat oil in a wok, cook chicken, onions and mushrooms until chicken is cooked through. Toss with oyster sauce, serve warm, garnished with green onion.
