Arroz Amarillo
This wasn't as yellow as I expected, but it was quite delicious. We used saffron for this first variation, maybe using yellow food coloring will make it more yellow.
Arroz Amarillo (or Yellow Rice)
- 1/2 cup olive oil
- 1 onion, chopped
- 1 green pepper, sliced
- 2 tomatoes, peeled, seeded, and chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 2 teaspoons salt
- 1/2 teaspoon saffron or yellow food coloring
- 2 cups rice
- 4 cups chicken broth
Sauté onion, green pepper, tomatoes and garlic in olive oil. Stir in bay leaves, salt and saffron with rice and chicken broth. Bring to a boil. Cover and simmer for 20-30 minutes, until cooked through. Garnish with peas, pimiento and parsley. Serve with fish, chicken or meat.
