Balsamic Glaze

We tried a delicious appetizer at the restaurant the other day and thought it would be fun to recreate it at home. Their version was prosciutto on a bed of arugula with a dollop of burrata cheese drizzled with balsamic glaze. We couldn't find burrata cheese at our normal grocery store so bought some fresh mozzarella instead. I learned that balsamic glaze is just balsamic vinegar reduced, so I did that this morning. I think I reduced it too much, though, because it was more like a jelly this evening. (Microwaving it for a few seconds made it drizzle-able; stirring in some additional balsamic vinegar also helped.) 

I added sliced tomatoes to our appetizer, but next time will omit them. Tomatoes and mozzarella are delicious, and so are prosciutto and mozzarella, all three together are a bit much, but still delicious.
