Jalapeno Paste

 

The tubes of herbs have been stacking up in the refrigerator, but now one of them is gone. Is there something other than Mexican food that uses jalapenos? We used it in shrimp quesadillas and fajitas and, of course, refried beans.

Making refried beans really is just a process. Heat some oil in a frying pan and cook some chopped onion. Add some cooked pinto beans. Puree more cooked beans to stir in, add some salt, then serve warm. (I like a ratio of about one part whole beans and 3-4 parts crushed beans. Wayne likes his refried beans in a quesadilla; I prefer them mixed with rice and cheese, and sometimes corn. Don't forget the toppings!
