Once Baked Potatoes
You don't really need a recipe to bake potatoes, do you? Stick washed potatoes in the oven until they're cooked through. The hotter the oven, the less time it will take. Normally, I plan on over an hour for "normal" sized russet potatoes at 350 degrees, and closer to 45 minutes at 450 degrees. If you forget to poke the raw potatoes with a fork, they may explode and leave a big mess for you to clean. To prevent that, I normally wrap the potatoes in foil.
However, Wayne recently had an oiled and salted baked potato at a restaurant and decided he wanted to try that at home as well, so we did. Scrub, poke and dry the raw potatoes. Rub with olive oil and sprinkle with kosher salt. It will be messy, but just use your hands! Place on a parchment or silicone lined baking sheet and bake at 425 degrees for about 45 minutes. This recipe suggested turning them half-way through; I did, but I'm not sure it's necessary. Note to future self: use tongs, not the potholder. We enjoyed them this way. Maybe we'll alternate methods more frequently.
