Instant Pot Artichokes
I picked up some artichokes for Sunday dinner and when it was time to fix them, Wayne asked if cooking them in the instant pot would be faster, so I decided to see if it was. It should have been, but I guess these were larger than normal. The recipe I found suggested 10 minutes on high with a rapid release. (Place 1 cup of water, 2 mashed garlic cloves and a couple tablespoons of lemon juice in the bottom of the pot and the trimmed artichokes on a rack before turning on the pressure cookier.) When I checked, they still seemed a bit hard, so I cooked them again for another 10 minutes. Unfortunately, I didn't think to replace the water which all disappeared and turned the bottom of the pan black!
Roasting artichokes, which we've tried before, didn't turn out as well as I expected either. We'll probably stick with boiling/steaming our artichokes in the future. Fortunately, though, after soaking overnight in water with baking soda, the burned bottom pan cleaned up quite nicely with minimal effort.
