
Someone cooked us a yummy breakfast the other day -

another variation of a Spanish omelet. This one had ham, potatoes, mushrooms, pimentos, and green peas in it. It's cooked the same way as the others (
here and
here). Beat the eggs and stir in the rest of the ingredients. Heat olive oil in a frying pan and pour in the egg mixture. Once it's set, use a plate to invert it and cook the other side. Then cut in half and serve.

Delicious!
And I realized I didn't post about the omelet we tried before this one. That combination was eggs, onions and shrimp. Super delicious!!
