More Baked Beans


As I was emptying the last couple of cans of baked beans from the box, I noticed some recipes printed on the back, and decided that we should try them, so we did. We probably won't make them again, but doing so once made a couple of nice meals.

First was for a quesadilla. Top a tortilla with some cheddar cheese, some baked beans, a bit of chopped onion and green pepper, then more cheese and another tortilla. Cook until cheese melts, then serve with sour cream and salsa. As far as quesadillas go, it wasn't bad, but we'll stick with regular refried beans, not sweetened, liquid-y ones.

The other recipe was for a bean dip. Combine equal amounts baked beans, corn, Rotel (tomatoes and chilies) and stir in some garlic and chopped green onions. Serve with tortilla chips.
