Flat Parsley!


It only took one recipe to use up the parsley we got at the grocery store this week, but there are plenty of other dishes I could have tried. Of course, you can also use it as a garnish; if so, it might take a few days to finish off the package. This particular recipe is just a variation of Rice Pilaf. I knew I'd like it (I did), and I also knew that while Wayne would it eat, he would have preferred a sauce on top (he did). And this recipe also uses one of the bay leaves that are still in the fridge!

Green Rice

  • 1-2 tablespoons butter and/or olive oil
  • 1 cup rice
  • 1/2 cup diced onion (green preferably, but white works)
  • 1/2 cup minced parsley
  • 1 bay leaf
  • 2 cups chicken broth
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
Heat the butter/oil in a large saucepan. Stir in the rice and cook until starts to turn golden, but don't let it scorch! Add the onion and parsley and cook another minute or two. Stir in remaining ingredients and bring to a boil. Lower heat, cover and cook for 15-20 minutes, until the rice is done. Fluff and serve.
